
Burrito Casserole Turned Burrito Pie
I love good Mexican food! Several months ago I found a recipe for Burrito Casserole from Miranda’s Recipes and it quickly became a family favorite. But since I tend to be a bit lazy when preparing dinner late in the afternoon, I didn’t like having to tear up all the tortillas. So I grabbed my favorite pie dish and decided to create this yummy burrito pie instead. 🙂 Note the ingredients for burrito pie are the same as what you would use for a burrito casserole.
How To Make Burrito Pie
- Brown your ground beef and drain.
2. While browning, chop up half an onion.
3. Add the onion to the pan until they are translucent.
4. Add a package of taco seasoning…
…and a can of refried beans.
5. While all that is warming up, mix 1 can of mushroom soup with 1/2 cup of sour cream.
6. Once you’re ready to start layering, trim the ends of your tortilla (with clean kitchen scissors) so that it lays nicely in the bottom of your pie dish. Remove the tortilla and spray the dish with nonstick cooking spray.

…and don’t worry that your sour cream mixture mixes in with the cheese from the previous layer. This is just fine. 🙂
7. Add a good amount of cheese to the top…because you can never have too much cheese, right?!?! Okay, maybe you can.
8. Cook uncovered at 350 degrees for 30 minutes.
Remove from oven and top with green onions, if you like.
Cut like a pie and serve!
Burrito Pie Recipe
- 1 pound ground beef
- ½ an onion
- 1 package taco seasoning (1.25 oz.)
- 4 large burrito-size flour tortillas
- 1 can refried beans (16 oz.)
- 1 can cream of mushroom soup
- ½ cup sour cream
- 2-3 cups shredded cheddar cheese
- Green onion for garnish
- Preheat oven to 350 degrees.
- Brown and drain the ground beef.
- While the beef is browning, chop up half of an onion.
- Add the onions to the pan and cook until they become translucent.
- Then add a package of taco seasoning and a can of refried beans to the pan.
- While the meat mixture is warming, mix 1 can of mushroom soup and ½ cup of sour cream in a separate bowl.
- Once you are ready to start layering, trim the outer edge of your tortilla with clean kitchen scissors so that it fits nicely into the bottom of your pie pan.
- Remove the tortilla and spray the pie pan with nonstick cooking spray.
- Spread ¼ of the sour cream mixture into the bottom of your pan. Add a tortilla and then ¼ of the meat mixture. Sprinkle with cheese. Repeat this 4 times total.
- Cook uncovered at 350 degrees for 30 minutes.
- Remove from oven and top with freshly chopped green onions.
- Slice like a pie and serve!
