This Easy Twice Baked Potato Casserole is the perfect side dish for the holidays...it takes 10 minutes to prep and it tastes heavenly! Super easy to double to feed a crowd.
Ingredients
1 package of microwaveable Steam & Mash Potatoes
⅔ cup evaporated milk (from the can)
2 tablespoons butter
3 ounces softened cream cheese
½ cup sour cream
2 teaspoons chives
½ teaspoon salt
Pinch of pepper
1 cup shredded cheddar cheese
Bits of bacon to sprinkle
Instructions
Follow directions on the package of microwavable Steam & Mash potatoes.
Use either a potato masher or kitchen mixer to mix potatoes until smooth.
Add the butter, evaporated milk, cream cheese, sour cream, chives, salt and pepper and mix.
Pour mixture into a greased 8x8 pan.
Top with cheese and bacon sprinkles.
Bake uncovered at 350 degrees for 30 minutes.
