Our Apple Carrot Muffins with Streusel Topping are the perfect treat and since they are packed with real veggies and fruit, you can eat them without guilt!
Ingredients
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
¼ teaspoon salt
1 cup sugar
1½ cups grated carrots
1 Granny Smith apple, peeled, cored, and grated
3 eggs
½ cup coconut oil (or a different type of oil)
½ cup applesauce
2 teaspoons vanilla
Streusel topping:
1¼ cups old fashioned oats
1 tablespoon flour
⅓ cup brown sugar
½ teaspoon cinnamon
2 tablespoons butter, cut into chunks
1 tablespoon honey
Instructions
Preheat oven to 350 degrees Fahrenheit.
Mix the dry ingredients together.
In a separate bowl, mix the wet ingredients.
Using a stand or hand mixer, combine the wet and dry ingredients as well as the grated carrots and apple.
Spray muffin tin with nonstick spray and fill up to ¾ full with muffin batter.
In a separate bowl, mix together the ingredients for the streusel topping. Combine until crumbly and sprinkle on top of the unbaked muffin batter.
Bake for 15-20 minutes, or until a toothpick comes out clean.
